This Middle Eastern and North African-inspired dish features poached eggs in a rich tomato and bell pepper sauce, packed with flavour and nutrients.
Not only is it easy to prepare, but it’s also a great way to sneak in extra veggies for a wholesome, satisfying meal.
Here’s a simple and delicious Shakshuka recipe—perfect for a hearty breakfast or brunch!
Ingredients:
- 2 tbsp olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground coriander (optional)
- ¼ tsp chili flakes (optional, for spice)
- 1 can (400g) crushed tomatoes
- Salt and pepper, to taste
- 4-5 eggs
- Fresh parsley or cilantro, chopped (for garnish)
- Feta cheese, crumbled (optional)
- Crusty bread, for serving
Instructions:
- Sauté the aromatics – Heat olive oil in a large pan over medium heat. Add onion and bell pepper, cooking until softened (about 5 minutes).
- Add the spices – Stir in garlic, cumin, paprika, coriander, and chili flakes. Cook for another minute until fragrant.
- Simmer the sauce – Pour in the crushed tomatoes, season with salt and pepper, and let it simmer for 10-15 minutes until slightly thickened.
- Add the eggs – Make small wells in the sauce and crack the eggs into them. Cover the pan and cook for about 5-7 minutes, or until the egg whites are set but yolks are still runny.
- Garnish and serve – Sprinkle with fresh parsley or cilantro, crumbled feta (if using), and serve with warm crusty bread.
