Shakshuka: A healthy and flavorful egg dish for the whole family

Eggs are a fantastic source of protein and essential nutrients, making them a great addition to any balanced diet. If you’re looking for a delicious way to incorporate more eggs and vegetables into your family’s meals, Shakshuka is the perfect choice. 

This Middle Eastern and North African-inspired dish features poached eggs in a rich tomato and bell pepper sauce, packed with flavour and nutrients.

Not only is it easy to prepare, but it’s also a great way to sneak in extra veggies for a wholesome, satisfying meal.

Here’s a simple and delicious Shakshuka recipe—perfect for a hearty breakfast or brunch!

Ingredients:

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground coriander (optional)
  • ¼ tsp chili flakes (optional, for spice)
  • 1 can (400g) crushed tomatoes
  • Salt and pepper, to taste
  • 4-5 eggs
  • Fresh parsley or cilantro, chopped (for garnish)
  • Feta cheese, crumbled (optional)
  • Crusty bread, for serving

Instructions:

  1. Sauté the aromatics – Heat olive oil in a large pan over medium heat. Add onion and bell pepper, cooking until softened (about 5 minutes).
  2. Add the spices – Stir in garlic, cumin, paprika, coriander, and chili flakes. Cook for another minute until fragrant.
  3. Simmer the sauce – Pour in the crushed tomatoes, season with salt and pepper, and let it simmer for 10-15 minutes until slightly thickened.
  4. Add the eggs – Make small wells in the sauce and crack the eggs into them. Cover the pan and cook for about 5-7 minutes, or until the egg whites are set but yolks are still runny.
  5. Garnish and serve – Sprinkle with fresh parsley or cilantro, crumbled feta (if using), and serve with warm crusty bread.
